Volume matters, both too loud and too quiet cost you. Clarity means comfort. Poorly distributed or poor quality speakers, echoes, or blaring volumes force guests to raise their voices. This isn’t just uncomfortable—it shortens dwell time. Guests leave sooner, reducing opportunities for extra drinks or dessert sales. A well-tuned sound system avoids “hot spots” and ensures every seat has the same comfortable listening experience.

The science you can use (without the jargon)
Key metrics to manage
- Reverberation Time (RT60): How long sound “hangs” in the room. This is also an indicator of how reflective your room is and how much sound bounces around. Shorter RT60 improves clarity and lowers overall noise buildup in busy services. For dining rooms, a practical target is roughly 0.7–1.1 s depending on concept (intimate vs. lively). - Speech Intelligibility (STI / STIPA): Objective score (0.00–1.00) for how easily guests understand speech. Aim for STI ≥ 0.60 at tables and host stands so ordering and upselling are effortless. (Measured to IEC 60268-16.) (Source: NTi Audio)
- Background level / Masking (NC/RC or dBA): NC stands for Noise Criterion, which is a way of measuring the maximum background noise across all frequencies. The “quiet floor” your HVAC and equipment creates. RC stands for Room Criterio, which looks at overall loudness but also the spectral balance (whether the sound is rumbling, hissy, or balanced). RC provides a better predictor of comfort, since two rooms with the same NC rating can feel very different if one has excessive low-frequency rumble.
For premium dining, keep background noise roughly in the NC-30–35 / low-40s dBA range. An RC below 35 is also advised to keep the room feeling neutral with a balanced spectrum. Rules of Thumb for High-End Hospitality:
- Don’t just hit a number. Always aim for RC Neutral curves, because a space that measures NC-30 with strong rumble may technically comply, but still feel uncomfortable.
- Tailor by occupancy. The more premium and conversational the space, the lower the NC/RC and RT60 targets should be.

- Design for RT60 ≈ 0.7–1.0 s (dining room), 0.5–0.7 s (private dining/chef’s table), 1.0–1.2 s (lively bar). Tackle ceilings first (largest uninterrupted surface), then upper-wall absorption and soft finishes to hit targets without changing your visual identity. - Brunch/lunch high-turn: slightly faster tempo; moderate levels for clarity.

- Zone your playback & acoustics. Treat bar, dining, PDRs, washrooms, and back-of-house differently. Use distributed audio with tight DSP control (limiters, EQ, gentle dynamic range management or automatic noise compensation) so volume doesn’t creep through the service when background noise isn’t rising. Volume drift is a silent margin killer.
- Commission & re-tune quarterly. Measure RT60, STI, and background levels after seasonal layout changes (banquettes, rugs, drapery) and menu shifts that alter service pacing.
